Really, any ideas would be welcome – right now I’m about zuked-out and we aren’t even that deep into the growing season yet! I’ve got another batch of zuke chips on the dryer (cheesey ranch flavored) and a few quarts shredded and frozen for use later in the year. Today Skye and I will have deep fried zucchini for lunch, and tonight I might throw some into a casserole of some sort (probably shredded, to camouflage it from my picky eaters).
I’ll need some for veggie soups I’ll can up later on when I have more other types of veggies ready, but for now, I’m slowly sinking in a sea of earthy green.
Anyway, if anyone is interested, here is how to make the chips:
Unfried, Super Healthy Zucchini Chips
Enough thinly sliced (about 1/4″) zukes to fill up your dehydrator (my electric one only holds one large zucchini, so I have my solar ones going right now, too)
1 gallon cool water
2 TBS salt
Seasoning of choice (we like white cheddar powder, ranch or Old Bay…)
- Stir the salt into the water and toss in the chips. Let that soak for about a half hour (I’ve skipped this step and had things turn out just fine, so keep that in mind).
- Lay the chips onto your dehydrator trays and then sprinkle thoroughly with your seasoning powder – I only do the tops to keep things from getting too salty.
- Turn on the dehydrator (if it’s electric) and take them out when they are bone dry and crisp.
- Store in an airtight container – these keep for quite awhile if you can keep folks from eating them all!

Because of all our rain my zukes didn’t go in until the first of July. The plants are growing, but alas, no zucchini yet. None of my neighbors garden so I’m really missing some! It seems silly to buy them, but I just might. I’d love to do the chips, too.
I bought a second dehydrator from the thrift store this winter. Last year was the first year I really preserved food-canning, freezing & drying–and I planned to do even more this year. The dehydrators do fill quickly especially when I’m really working on those herbs and apples.
